Instructions
The pancakes
  1. Dice the beetroot and add to a measuring cup.
  2. Now add all the other ingredients.
  3. Blend into a creamy, even batter. It’s pretty thick, so well get fat little pancakes!
  4. Heat a pan over a high heat with a lump of butter or a dash of oil. As soon as it’s molten, spread it out over the pan.
  5. Use a ladle to scoop some batter into the pan. Spread it out a bit with the ladle’s round end. Scoop in another 2 to 3 piles of batter. The pancakes should turn out to be about a hand palm in size.
  6. Turn the heat down to medium and fry like you would regular pancakes: as soon as the batter is dry on top, flip them over. Fry the other side until golden brown as well and take them out.
  7. Add some more grease*** and repeat until the batter is finished.
  8. If the batter gets too thick, add some extra milk. Stir well before you continue frying.
The topping
  1. Preheat the oven to 180°C.
  2. Spread the pancakes out over a baking tray with baking paper and sprinkle them/cover them with your cheese of choice.
  3. Go nuts with the toppings and put the tray in the oven.
  4. The pancakes should be done after about 15-20 minutes. Brunch and enjoy!
Recipe Notes

Important: It can be bit tricky to find the right setting for your stove, so try different intensities.

* In Beau and Nousjka’s recipe, the toppings are bacon bits, beetroot, walnut and mint. Delicious, but a lot of work. If you have a lot of time on your hands, you should really go for it, but you can keep things simpler and just as good with fewer toppings. You can even enjoy them without anything on top!

** If you’re trying the chocolate topping, don’t use the feta as a base, it’s too dry. Instead, use cream cheese or a goat cheese spread.

*** When you’re frying the pancakes, use a paper towel to spread around the grease evenly. From the second batch, take it straight out of the butter dish.

Tip: You can enjoy the pancakes cold or reheat them (even with an oven baked topping). You can also freeze some to enjoy on an even lazier Sunday to come. 😉
