Singlemade: Cucumber ice popsicle

I hate wasting food, so I always try to find ways to use leftovers. That’s how these cucumber water ice treats came to be! Last year, after making a large batch of tzatziki (coming online soon!), I had a bowl of cucumber seeds left. What was I supposed to do with those?

We were in the middle of a heatwave, so I didn’t feel like making soup…but ice would be great! Lemons and mint I always keep stocked during summer (#mojitotime) and there ya go!

Cucumber ice popsicles with mint and lemon
Instructions
  1. Add the cucumber seeds to a blender (or a beaker to use an immersion blender with. Add an equal amount of water. Peel the half a lemon and make sure the white flesh/membranes and the seeds are removed. * Add to the blender.
  2. Pick the mint leaves and add them along with a spoonful of honey or agave syrup. Mix/blend everything into a green juice. Taste to see if it needs some more sweetening!
  3. Pour the juice into the moulds. Put the moulds in the freezer and get ready to dig in in a couple of hours!
Recipe Notes

I like the acidity in the water ice. If you like things sweeter, just add an extra spoonful of sweetener.

* The lemon will add structure to the ice, but you can just add lemon juice.

Caroline though the first licks were a bit sour but delicious. As she progressed, the acidity seemed to disappear :-). In short: a delicious popsicle!

And Kobus is a fan as well! His comment was short and sweet: deliciously refreshing!
