When I happened upon Claudia’s Instagram-account, Gemueseliebelei, I was immediately sold. So much inspiration to spruce up your lunchbox… I just knew we had to collaborate! 🙂
A few years ago, Claudia was diagnosed with Chron’s disease (in short: inflammation of stomach and intestines, with severe repercussions). Claudia decided to take matters into her own hands and drastically modified her diet. She doesn’t eat any prepackaged foods and only goes voor fresh and homemade meals.
And Claudia’s food philosophy shows in her lunchbox. She started looking for ingredients she could take to work, causing a lot of curiosity among her colleagues!
Because of her lunchbox’ success and with her son’s encouragement, she started an Instagram account to show off pictures of her creations. It’s called Gemueseliebelei, a play on words in German which means something like vegetable flirting.
And that’s not all! Claudia hosts workshops on ayurvedic cooking, which goes with the seasons and balances body and mind. She also develops recipes for a local coffee shop and recently she put up the Gemueseliebelei-website! It’s in German for now, but she’s thinking of launching an English version! 😉
Claudia developed a lunchbox-recipe just for Singlemade. Courgette muffins with feta cheese, served with an ajvar dip. The recipe is for 6 muffins, but you can keep them in the freezer without a hitch. Freeze them in pairs or per 3 and take them out in the morning or at night for the next day. Easy as can be!

Caroline and Stijn agree: these are super easy to make and they’re done in a minute! Caroline admits she went a bit wild with the thyme, which compromised the overall taste! (Tip: be careful with herbs!).
Stijn’s a superfan! He made two with thyme and four without it (because he was in a hurry and forgot to add thyme to the first four! ;-p). And he’ll be making more soon! Filling, nice and spongy and not all dry, not even after being out for half a day! Yes, Stijn’s convinced! 😉
