Most lunchboxes are filled with sandwiches, often out of habit but mostly because they’re easy to make. And it’s a shame if you ask me, because there are better (and healthier) alternatives out there that are at least as convenient as sandwiches!

To prove this, we’re having a lunchbox-week on Singlemade with varied, healthy and easy recipes and ideas. Boring sandwiches do not belong in this lineup! 🙂

If you know what’s what, you’ll know that Aïki noodles are the staple of most college student’s diet. Just add water, wait a couple of minutes and bam, dinner’s ready. Following this principle, we’ll make healthy instant noodles with real vegetables!

Instructions
  1. Break the noodles up into large chunks over a jar***. Crumble the bouillon cube over them.
  2. Cut 2-3 mushrooms into crescents over the noodles. Cut a length of courgette (+-5 cm) in half and dice it over the noodles. Add about a handful of frozen peas.
  3. Screw on the lid and take the jar to work, school...
  4. Fill it with hot/boiling water, screw the lid back on and leave to set for 5 minutes, then open, stir and enjoy!
  5. Ps: Of course you can drink the stock! #food&drinks
Recipe Notes

* Instant noodles are easily found in most supermarkets’ exotic department. Be sure to look for noodles that are ready in minutes!  They’re often pressed into squares of 50 gr. Use 1,5 square for a single serving.

** We’re only using part of the courgette. You can also use the seeds left over from the zucchini pasta!

*** Vegetable jars are perfect to make these noodles. If you’re buying a jar, I can recommend Weck or Kilner, with a screw-on lid or with a clasp.

Tip: don’t eat these noodles in your best suit, they can splash a bit.

Tip: you can prepare the jar the night before and keep it in the fridge.

Stijn was impressed with this adaptation of instant noodles. And it’s a perfect lunchbox: the noodles are very filling and ready in a sec! And the variations are endless: use different veggies, add an egg… He’s got plenty of inspiration!
Stijn didn’t have a jar so used a bowl which he covered with some tin foil. Worked perfectly! (Tip!)
Tip: De courgette was a bit too al dente, so make sure to slice it thinly!
Stijn likes it a bit spicier, so he was glad he could borrow a colleague’s hot sauce! 😉
