Most lunchboxes are filled with sandwiches, often out of habit but mostly because they’re easy to make. And it’s a shame if you ask me, because there are better (and healthier) alternatives out there that are at least as convenient as sandwiches!
To prove this, we’re having a lunchbox-week on Singlemade with varied, healthy and easy recipes and ideas. Boring sandwiches do not belong in this lineup! 🙂
If you know what’s what, you’ll know that Aïki noodles are the staple of most college student’s diet. Just add water, wait a couple of minutes and bam, dinner’s ready. Following this principle, we’ll make healthy instant noodles with real vegetables!

Stijn was impressed with this adaptation of instant noodles. And it’s a perfect lunchbox: the noodles are very filling and ready in a sec! And the variations are endless: use different veggies, add an egg… He’s got plenty of inspiration!
Stijn didn’t have a jar so used a bowl which he covered with some tin foil. Worked perfectly! (Tip!)
Tip: De courgette was a bit too al dente, so make sure to slice it thinly!
Stijn likes it a bit spicier, so he was glad he could borrow a colleague’s hot sauce! 😉
