  1. Peel the mango and cut the flesh from the core. Put the mango pieces into the blender (or into a beaker for the immersion blender).
  2. Peel the half a lemon and make sure to remove the white membranes and the seeds. ** Add it to the blender.
  3. Add the yogurt and an equal amount of water, along with a tablespoon of honey or agave syrup.
  4. Blend everything into a smooth yogurt drink. Taste to see if it needs additional sweetening.
  5. Pour the liquid into a glass and add some cardamom as a finishing touch! Serve immediately.
  6. Divide the rest of the lassi into the popsicle molds. Freeze them for a couple of hours and attack!
Recipe Notes

*The riper the mango, the better! You can also use frozen mango cubes, but for the popsicles, fresh mango is best!

** This’ll add texture to the ice, but you can just use lemon juice as well.
