In case you didn’t know it: I’m a lazy chef and proud of it! Why make it hard on yourself when you can take it easy? :-p And being lazy comes with nothing but advantages. It means I’m always looking for the simplest and easiest way to cook delicious food.

A while back I vented on my love-hate relationship with risotto. I think it’s delicious, but it’s just too much of a hassle. That’s why, back then, I developed a version with oatmeal. It’s a great faux-risotto, but rice still kinda beats oats…

When I got my Ferleon-cooking pot, I was on cloud nine. A pot to use on the stove as well as in the oven! I just knew my life would change. And it did! Thanks to my Ferleon-pot I can now make a proper rice risotto without all that stirring!

So you’ll need a Ferleon-pot for this recipe. You might be able to pull it off with another oven-proof cast iron cooking pot, but I’m not gonna bet on it :-p. Joking aside, I can really recommend you take a look in the Ferleon-range. A beautiful, modern design and Belgian quality. Yes, I’m a fan!

No-stir risotto with chestnut mushrooms
Instructions
  1. Preheat the oven to 200°C.
  2. Heat the Ferleon-pot over a high heat with a generous dash of olive oil. Meanwhile, peel the onion, cut it in half and into crescents over the pot. Let it simmer a while.
  3. Meanwhile, cut the mushrooms into crescents. Add them to the onion and give them a stir.
  4. Pour in the risotto rice and stir. Now add the water and the wine and crumble the bouillon cubes over the pot. Stir.
  5. Put the pot into the oven under a lid. Leave to to cook for 20 minutes.
  6. After 20 minutes check to see if the rice has absorbed all the moisture. If needed, keep the pot in the oven for a while longer.
  7. As soon as the rice is done, take out the pot (watch out, it’s hot!). Stir some grated Parmesan cheese into the rice (as much as you like), leave to melt for about a minute and serve immediately.
Recipe Notes

* Open a small bottle of wine, so you’ll have a glass to pair with the risotto. 🙂
