Last November was all about pumpkins so Singlemade’s already pretty well stocked with yummy pumpkin recipes. I wasn’t planning on adding another one, but karma, or fate, or some other cosmic force struck!
Berlin was freezing cold and that means it’s oven time. I had a little pumpkin laying around that was nearing the end of its shelf-life, so I thought, what the hey? I cut it into crescents because it was easiest (once a lazy chef…) so there I was with a preheated oven and a tray full of pumpkin crescents. How do you make that exciting? A drizzle of oil here, a bit of thyme there and then I saw the light. From the corner of my eye, I caught sight of a tin of dates that I couldn’t ignore, so I spread them over the pumpkin. 25 minutes later it was all done and I could only draw one conclusion: this needs to be on Singlemade!
Guys, this combo is awesome, even though I say so myself :-P. Just for the singles I added a chicken drumstick to make a fully fledged meal. This recipe is perfect for cold (lazy) winter days and it even wouldn’t look bad at all on a Christmas buffet!

None the less than my mother and nephew tested and approved this recipe. Tips from my mother: bought a huge pumpkin? Cut it into cubes! And the chicken drumsticks are lovely with chicken herbs as well!
