This recipe was supposed to come online in 2018 but it never made it to the blog back then. I just didn’t get around to writing it out and sending it to the test panel. But it was one of the first recipes to be tested in 2019. And it was an overnight sensation! Kobus told me he knew this was a winner as soon as he stirred the Parmesan cheese into the sauce. That evening, his girlfriend was especially impressed with his cooking skills! 😉

The combination of cream, cheese, chicken, garlic and spinach means success guaranteed if you ask me. And it’s dead easy to make at that. In other words: a great start for a delicious 2019! 😀

Oven Baked chicken drumsticks with potatoes, spinach and parmesan cheese
Instructions
  1. Preheat the oven to 200°C.
  2. Dice the potatoes and lay them out inside a small casserole. Make sure they’re not on top of eachother.
  3. Heat a pan with a dash of oil. In the meantime, rinse the drumsticks with cold water. Dab them try and season them generously with pepper and salt. Fry them in the pan until all sides are golden brown. This should take you about minutes.
  4. Meanwhile, peel the onion and the garlic and chop them finely. Take the drumsticks from the pan and lay them on top of the potatoes in the casserole. Fry the onion and garlic in the chicken’s grease.

  5. Douse the onion with cream and bring to a boil. Add the spinach and half of the Parmesan cheese. Season with pepper, salt and nutmeg. The spinach should melt into the sauce.
  6. Pour the sauce into the casserole, covering the potatoes. Avoid getting spinach on top of the drumsticks. Sprinkle the rest of the Parmesan cheese over the chicken and bake in the oven for about 30 minutes.

  7. After 30 minutes, check to see if the potatoes and the chicken are done. If not, keep the casserole in the oven a bit longer or zap it in the microwave oven for a couple of minutes (especially in case you have a weak oven or a combination oven).
Recipe Notes

Tip: Feel like mushrooms? Replace the spinach with 4 diced mushrooms. Of course, you can add them next to the spinach.

Tip: This recipe serves 2 people but you can easily multiply it. Just keep in mind that the cooking time will differ. You should then cook the potatoes in the microwave oven for about 5 minutes in the casserole, covered with suitable foil and on the highest setting.

Kobus and Stijn were raving! The recipe originally only served 1 person but they both thought it should be for 2, because you want to eat it twice as much. 🙂
Stijn’s Tip: next time around he’ll be using both mushrooms as well as spinach!
