Singlemade: Pink beetroot dip

I love dips. Most of all because they’re so much more than a dip: you can use them in a salad, spread them on a sandwich or in a wrap. They’re a healthy substitute for mayonnaise (but not with french fries! :-p)… In short: Singlemade needed a beetroot dip recipe!

Pinterest is filled with beetroot hummus, but I was fascinated with Uit Pauliens Keuken’s beetroot tzatziki. I’ve made my own version – single proof of course – and even though it looks nothing like the original, I’d like to give a shout out to Pauline anyway! 😉

And I think this dip’ll be a big hit with the ladies, because just look at its colour! #babypink 😉

Pink beetroot dip
Instructions
  1. Rinse off the beetroot and dab dry with a paper towel.
  2. Grate the beet over a bowl. Watch your fingers!
  3. Add the beetroot’s weight in cheese, a pinch of salt and 5 turns of the pepper mill.
  4. Mix well and season to taste if needed. Done!
Recipe Notes

Tip: Mix in some freshly diced garden herbs for a nice green touch!

Tip: To make the quick and easy dipping triangles from the picture: cut a wrap into triangles and briefly fry both sides in a hot pan without cooking grease. Season with pepper and salt. Done!

Stijn agrees: this takes no time at all! Healthy and hardly any dishes to do, yes, that’s big win!
Tip: He only found par-boiled beetroot discs. He used a masher to puree them. Works like a charm!
Stijn admits he had forgotten how good beetroots are. He used the dip on a wrap with salmon and spinach he had for dinner. He used the leftover dip on his sandwiches for work! Delicious!
