Our neighbours watered our plants while we were traveling and we wanted to thank them. And when we thank people, it usually takes the shape of food. 🙂
I still had a huge bag of tortilla chips lying around that I’d bought on a whim. Having kids over was perfect to get rid of this mistake, but just serving them as-is was even beyond my level of laziness. I had to at least make it appear as if I’d gone to some trouble for them! :-p
One of the many tapas we’d had in Spain were baked nacho chips. After a bit of scrolling about on the internet I decided on 2 varieties to serve.
The nachos had hardly made it out of the oven before the kids pounced on it like starved lions. The grown-ups risked their fingers as they tried prying a couple of chips loose. 🙂 They were gone in no time and the kids begged me to share the recipe so they could make their own!
So here it is! I jotted down the recipe the next day and shared it with the test panel. They turned out to be perfect for football matches, (Christmas) parties, movie nights or neighbour visits! Success guaranteed! 😉

These nachos got Caroline ready for a football game. Her Tip: add finely chopped onions. Don’t like it spicy? Use bell peppers instead of chilis!
